shop by Billy Reid, a seminar by designer Natalie Chanin, chats and
classes by historians, soapmakers and cotton farmers, as well as
cheesemaking by Tasia Malakasis. Food will be provided by the fabulous <a href="http://www.jimnnicks.com/" target="_self">Jim 'N Nick's</a> and at 3pm there will be music by Donica Knight.<br />

Clean Eating is different. Clean Eating, in a nutshell, is going back to eating as it was before science intervened. Eating whole, unprocessed foods. Avoiding excess sugars, which our ancestors did without even trying.<br />

1. <b>Choose whole, natural foods and seek to eliminate or minimize processed foods.</b>
Processed foods are anything in a box, bag, can, or package, and although there are always a few exceptions to the rule (like a bag of fresh green beans), the majority of your foods should be fresh.<br />
2. <b>Choose unrefined over refined foods.</b>
While it may not be possible all the times, you can up your intake of whole grains like brown rice, millet, amaranth, and quinoa. Beans and legumes are also important. Clean sugars include honey, maple syrup, and dehydrated sugar cane juice.<br />
3. <b>Include some protein, carbohydrate and fat at every meal.
</b>Most of us typically do well with carbohydrates and fat, but we often lack protein, especially in the early part of the day, like at breakfast and lunch. Protein is an important muscle-builder, and it can also help curb your appetite. When eaten throughout the day, it keeps us feeling full longer. Be aware of the kinds of meals you put together and space out your protein.<br />
4. <b>Watch out for fat, salt, and sugar.
</b>This is easier than you think, particularly if you’ve cut out processed foods, which are responsible for most of our excess calories and high levels of fat, sugar, and salt. <br />

3 pounds small white potatoes<br />
3/4 cup mayonnaise<br />
6 oz Belle Chevre Pimento Chevre

2 TBSP sherry vinegar<br />
1/2 cup chopped fresh chives<br />
1/4 cup green onions<br />
Freshly ground black pepper<br />
Kosher salt<br />

Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for about 15 min, until the potatoes are barely tender when pierced with a knife.<br />
<br />
Meanwhile, in a small bowl, whisk together the mayonnaise, pimento chevre, chives, green onions, vinegar, 1 tsp of salt, and 1 tsp of pepper.
When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. While the potatoes are still warm, pour enough dressing over them to moisten.<br />

Toss well, cover, and refrigerate for a few hours to allow the flavors to blend.<br />

<b>Goat Cheese Fondue</b></div>

1 clove of garlic, cut in half</div>
11 ounces Belle Chevre<a href="http://www.bellechevre.com/shop/montrachet-style-goat-cheese-p-15.html"> goat cheese</a> log,<br />
¼ cup white wine<br />
2 tsp lemon juice<br />
2 tsp corn starch<br />
1/2 tsp black pepper<br />
1 bunch of chives, finely chopped<br />
3 tbsp finely chopped parsley<br />

Rub each half of the garlic clove inside the fondue pot or double boiler. Discard. Add wine and lemon juice, and place over a pan of simmering water. Warm wine, then add the cheese a bit at a time, allowing it to melt before adding more. Mix well and stir regularly. Add the remaining ingredients, stirring until it is very smooth, 5 to 7 minutes. If it is too thick, add more warm wine. <br />

What is this work of art, you might ask?<br />

It's a picture of all the cards we received recently at the creamery from a 3rd grade class in Birmingham, Alabama. They read an article in the
Birmingham News about our <a href="https://www.facebook.com/BelleChevreCheeseShopAndTastingRoomElkmont">Cheese Shop & Tasting Room's </a>Grand Opening. This beautiful and creative outpouring of well wishes made our day!!!<br />

There are some things so obvious that you don't even think about them. For example: what could be better than bubbly, golden goat cheese layered with spicy tomato sauce? It's a no brainer, and it takes about 5 minutes to pull together.<br />

So think about it! Come by our Cheese Shop & Tasting Room, stock up on a few <a href="http://www.bellechevre.com/shop/montrachet-style-goat-cheese-p-15.html">logs</a>, and fire up the broiler. This recipe will find a comfortable home in your culinary repertoire and in your friends' bellies.<br />

<b>Goat Cheese Gratin</b><br />
<br />
10 oz Belle Chevre<a href="http://www.bellechevre.com/shop/montrachet-style-goat-cheese-p-15.html"> goat cheese</a>, crumbled<br />
2 t. fresh rosemary, chopped<br />
2 t. fresh oregano, chopped<br />
2 cups spicy arrabeticca Sauce<br />
2 dz. Nicoise olives, pitted & halved<br />
<br />
Preheat broiler. Scatter goat cheese on bottom of gratin dish.<br />
Sprinkle with 1/2 the herbs. Top with tomato sauce. Sprinkle remaining herbs and the olives<br />
over top. Broil until cheese is melted and fragrant and tomato sauce is sizzling. Serve with<br />

Enjoy a lovely night as Tasia and the cheesemakers at Belle Chevre
share their culinary knowledge with you and a few other guests. Classes
will be from 8-12 people, and attendees will receive copies of the
recipes and a custom kitchen notebook. The charge is $45/class, and if
you sign up for the whole series, you get one class free. They last
from 6pm to 7:30pm.<br />

Orange-Fennel Mostarda</div>

Place fennel, spices, sugar, vinegar, and water into a
small saucepot and bring to a boil over medium-high heat.

Meanwhile, as your saucepot is heating, zest the navel
orange. It should yield about 1 teaspoon, but if you get less, that is
fine. Set zest aside.
</li>

Peel the orange as if you were supreming or segmenting
it, but instead of segmenting, cut the orange into 4 pieces and remove
the middle pithy part, seeds, and hard rind (if any). The membrane
between the orange segments is fine. Dice what you have, which should
yield about 1 cup. Add to the saucepot, which should have come up to a
rapid simmer/boil about now. If the pot started boiling while you were
cutting up the orange, that is fine.

Once the oranges are in, bring to a boil for about 5
minutes, skimming any foam that appears, then turn down to medium.
Simmer until liquid is reduced to the consistency of maple syrup (nearly
all of the liquid will be gone by then) and the mustard seeds have
plumped up and softened, about 20-25 minutes. Set aside and cool, then
stir in reserved orange zest.

Note: At this point, there will still be pieces of
fresh orange in the mostarda. If you want a more cooked-down,
marmalade-ish consistency, bring the orange to a boil with the fennel,
and simmer on medium-low heat for 30 minutes.
